Sure, we all know making egg salad is pretty much a no-brainer. That’s what makes this egg salad perfect to fit into your Atkins phase 1 diet plan.
Although making egg salad is simple enough, most people either add too much or too little mayonnaise; hence, the reason for a pretty basic easy egg salad recipe.
Although this recipe doesn’t call for it, to add a little kick, you may want to consider adding some black or green olives into the mix. Olives give everything a little kick, and the best part about olives is, they’re included on the Atkins Phase 1 plan. You can even eat them in the Induction phase.

Atkins Phase 1 Super Sonic Crazy Easy Egg Salad

Egg Salad
Ingredients
- 8 large Boiled Eggs
- 1/2 cup Real Mayonnaise
- 3 teaspoons Dijon Mustard
- 1/2 teaspoon salt
- 1/4 teaspoon Black Pepper
- 2 stalk, medium Celery
Instructions
- Chop eggs and celery.
- In a large mixing bowl, combine all of the ingredients.
- Serve chilled.
